Creamy Artichoke Dip Pasta Salad using the Trader Joe’s Artichoke Antipasto is vegan and gluten free, and tastes like that rich and creamy warm artichoke dip that you love!
It is delicious served cold as a pasta salad or warm with melted vegan cheese like the warm artichoke dip! I really can’t choose my favorite way to eat it. I must confess that I’m obsessed with this Artichoke Antipasto spread. I’m even eating now on crackers as I write this post. (I also like it spread on a rice cake or even by the spoonful out of the jar – the stuff is just delicious!
My obsession with this artichoke spread soon lead me to create an artichoke dip. I mixed the Artichoke Antipasto with vegan mayo and and then added a layer of the Trader Joe’s vegan mozzarella cheese. It came out great to use on crackers, with chips, or tossed in with pasta to make this Creamy Artichoke Dip Pasta Salad.
