These cookie dough bites were created out of my need to find something that my finicky gluten free son could grab on his way out the door.  He is never hungry in the morning and always running late to catch the bus.  It had to be something that was sweet and appealing to kids, but easy to grab and go.  They also had also to be gluten free, vegan, and nut free.

Healthy Oatmeal Cookie Dough Breakfast Bites

Ingredients
  • 1 ¾ cup of oatmeal
  • ¼ cup ground flax
  • 3 TBS brown sugar or sweetener of choice
  • 1/8 tsp salt
  • ¼ tsp baking soda
  • 2 tbs gluten free flour of choice or protein powder
  • 3 tbs water
  • ¼ cup coconut oil or nut butter
  • Chocolate chips or raisins (optional)
Directions
  • Step 1 In a food processor, combine 1 cup of oatmeal – pulse a few times to grind up the oatmeal.
  • Step 2 Add the flax, sugar, salt, baking soda, water, coconut oil, and flour or protein powder.
  • Step 3 Blend until mixed thoroughly
  • Step 4 Add the remaining ¾ cup oat meal and mix lightly
  • Step 5 Add chocolate chip and/or raisins, mix, and roll into balls
  • Step 6 Keep in an air tight container in the fridge or freezer.

Kids think that they are getting to eat cookie dough for breakfast.  You don’t have to feel guilty because you know that they are getting the same nutrients that would be in a bowl of flax oatmeal.  After some experimenting, I have found that about 3 tablespoons of brown sugar are enough to make the balls sweet enough for my kids, but feel free to reduce the sugar.  You can also use agave nectar or another liquid sweetener, but if you do, reduce the water a little.

I wanted to make mine nut free, but if you like nuts, you can use your favorite nut butter instead of the coconut oil.  Most of the time, I use refined coconut oil, so it just tastes like oatmeal cookie dough, but if you like the flavor of coconut, the regular will work fine too.

Simply throw all the ingredients into a food processor, mix and roll into balls.  You can keep them in an air tight container the refrigerator or the freezer for quick gab and go breakfasts, snacks, or desserts.
