It is hard to believe this delicious maple bacon vinaigrette salad is vegan and gluten free and has no food dyes or preservatives – just the best flavor combination for a delicious salad. What goes better with the smoky flavor of bacon other than maple syrup?
This is definitely one of my favorite ways to eat a salad. Even hard-core meat eaters to be asking for more salad after trying this. I have to admit that it feels like you are cheating with this salad – it feels like more of a treat than healthy eating. It is a way I get myself and my family to eat a salad even if we aren’t in the mood for one.
Maple Balsamic Dressing:
- ¾ cup canola oil
- ¼ cup water
- 3 TBS Balsamic vinaigrette
- 3 TBS maple syrup
- ¼ tsp salt
- ¼ tsp garlic powder
- ½ tsp yellow mustard
- Step 1 Put all the ingredients into a bottle
- Step 2 Shake well
The maple vinaigrette dressing is a staple in my house. I use it in lots of different meals, not just this salad, so I usually keep a bottle of it made up in the fridge ready to go.
Feel free to adjust the amount of maple syrup in the recipe to suit your taste. I find that 3 TBS is the amount that I need to use to make it sweet enough for my kids to eat up all of their salad, but play around with it and let me know what you think.
To make the salad, use your favorite lettuce or salad mix, add some veggies, drizzle Maple Balsamic Vinaigrette over the top and sprinkle with bacon bits. (Most store bought bacon bits are vegan, they are just made with textured vegetable protein). Cherry tomatoes, cucumber, and broccoli are my favorite vegetables to add. but it is also good with just lettuce alone.
