Vegan Tofu Egg Salad Sandwich

Vegan tofu egg salad is, gluten free, egg free, cholesterol free, and dairy free, but amazingly tastes just like egg salad.  Egg salad sandwiches were something that I missed after going vegan.  When I had kids, I was searching for high protein sandwiches that I could pack for school lunches, so came up with this substitute for egg salad.

Make sure to use a firm tofu so it doesn’t fall apart when you mix it or spread it on sandwiches.  Cut it into very small pieces like you would an egg for an egg salad sandwich.

You can use it on sandwiches or as a dip or spread on crackers. Even my non-vegan friends and family like this.  It has the same color, texture and taste as egg salad, so even the skeptics like it.  Since it is made from tofu, if you let it sit overnight in the refrigerator, the flavors will soak into the tofu and make it even better.

Vegan Egg Salad

Ingredients
  • 1 pound of firm or extra firm tofu
  • ¾ cup vegan mayonnaise
  • 1 TBS spicy brown mustard
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp paprika,dash of tumeric
Directions
  • Step 1 Drain the tofu and wrap it in paper towels to absorb all excess water
  • Step 2 Cut the tofu in the very small cubes and put into a mixing bowl
  • Step 3 Add all remaining ingredient and mix well.
  • Step 4 Cover and refrigerate for a few hours

Egg salad is one of those recipes that always reminds me of that week after Easter when you have egg salad sandwiches every day to use up all those hard-boiled Easter eggs.  This vegan version is healthier, packed with protein and with no cholesterol.  Eat it anytime, not just when you have a bunch of hard-boiled eggs to use up.

Keep the vegan tofu egg salad the fridge and just spread it on a slice of bread or a crackers for a quick easy lunch or snack.  Since one of my children needs to avoid gluten, I often serve it as a snack on gluten free crackers.  If you are looking for a good gluten free vegan sandwich bread, our favorite vegan/ gluten free bread is Sami’s brand breads. (I have no affiliation with Sami’s, we just love their products).  They are not certified gluten free, but have no gluten ingredients.  I find it at small specialty stores or order it on line.
