Why drink smoothies?
We drink a lot of smoothies in our house. With a typical American family that is racing out the door in the morning to work and school, and evenings that are filled with homework and kids’ activities, we can at eat too many convenience foods at times. Smoothies are a great way to happily get a few servings of fruits and veggies into my kids!
They work great for breakfast and after school snacks. My kids even started asking for them for desserts! That’s when I got the idea that healthy smoothies could be made in our favorite dessert flavors too!
Apple cider in a smoothie? Really?
It may seem a little weird to see apple cider vinegar in this recipe. Surprisingly, it gives this strawberry cheesecake smoothie the tang and flavor of cream cheese. I knew that apple cider vinegar gives my cream cheese frosting a delicious, authentic cream cheese flavor, so I hoped that it would have the same effect in this smoothie… and it did! Apple cider vinegar has great healthy benefits as well, and I don’t think that there is a more delicious way to consume it!
What type of plant based milk should I use?
The recipe also calls for your choice of plant based milk. People have strong opinions about their favorite type of non-dairy milk. There are many choices and most will work great with this recipes. I usually use a vanilla flavored soy milk, but I know that some people avoid soy or think vanilla is too sweet. If you don’t like any of the milks or you want to save a few calories, you may also use a ¼ cup of oats and ¾ cup water in place of a cup of milk. This will give it the liquid it needs to blend, while still making the smoothie rich and creamy.
What about sugar?
Since people like varying levels of sweetness, the recipe says, “sweetener to taste.” Depending on the type of milk you use, the amount of needed sweetener will also change. Any neutral sweetener will work. I like any of the unrefined natural sugars like agave nectar, whole cane sugar, or coconut sugar.
Tip: If you are just starting to transition to healthier eating or you are trying to get your kids to drink healthy smoothies, start off with it sweeter. If you must add a little extra sugar at first to make the shift, then do it. As you get accustomed these foods, slowly reduce the sugar. You probably soon find that the sweetness of the fruit and milk is plenty.

They sell different types of vegan whipped toppings at natural foods stores. I like to make my own Aquafaba Whipped Cream. It is super easy and can be kept in the freezer for weeks ready to use.

- 1/2 frozen banana
- 1 cup frozen strawberries
- 1 cup dairy free milk
- 1 tbsp apple cider vinegar
- 1 tbsp dairy free cream cheese
- sweetener to taste
- vegan whipped topping
- Put all ingredients into your blender.
Blend on high for 20 seconds.
Stir and blend again until creamy.
Top with vegan whipped topping.

- The need for additional sweeteners depends on choice of plant based milk and sweetness level of strawberries.
