A classic vegan macaroni salad with a little optional twist! It’s rich and creamy vegan comfort food! This Wacky Macky, as my kids call it, is a vegan, kid-friendly twist on traditional macaroni salad! Macaroni, vegan mayo, and veggie dogs mixed together to create a pasta salad that tastes surprisingly like a bologna sandwich!
This macaroni salad was born out of needing picnic food in a hurry. I looked in the fridge and noticed that we had some left-over macaroni and some Smart Dogs. I mixed the two together and added some van mayo and told that kids that we were going to have a really wacky lunch, but surprisingly we all loved it!
This vegan macaroni salad seems a little strange, and it sounds like kid food, but I must admit that it is actually a favorite of the whole family.
What type of vegan mayo should I use in a macaroni salad?
There are many types of vegan mayo on the market now, and you can pick some up in most major stores, however, I like to make my own vegan mayo. It only takes about 5 minutes and it tastes great and saves a bunch of money!
Note: Just because it is vegan doesn’t mean that this is health food! This is deliciously creamy and quite filling so you may want to serve it as a side along with a healthy salad.
Need it to be a gluten-free macaroni salad?
You can get everything for this macaroni salad at Trader Joe’s, however, if you need to use gluten-free macaroni, I sometimes find it at Whole Foods or Aldi or can use this from Amazon. (You can also use any of the brown rice pasta that they sell at Trader Joe’s, they will all work well, they are just not macaroni shaped).

- 1 16 oz. package macaroni of choice
- ¾ cup vegan mayo
- 2 TBS yellow mustard
- ½ tsp garlic powder
- 1 package Smart Dogs or other veggie dogs cut into small pieces
- 1 stalk celery chopped small optional
- Salt to taste
- Cook the macaroni according to package directions.
While the pasta is cooking, mix mayo, mustard, and garlic powder together in a large bowl.
- Cut the cold Smart Dogs (and celery if desired) into bite-sized pieces and mix in with the sauce.
- Drain and rinse pasta well with cold water.
Toss pasta and mix all ingredients well.
Keep in the fridge until ready to serve.
- Leave out the veggie dogs for a more traditional pasta salad.
