Vegan Shepherd's Pie

Made with your choice of meat substitutes mixed with veggies and sauce, topped with fluffy mashed potatoes and baked to a golden brown.

Saute onions, then add mushrooms, garlic and herbs. Cook until mushrooms start to release juices. Add vegan beef (or protein of choice) and cook for 2-3 minutes.

Add mixed veggies and saute for about 5 minutes. Sprinkle with flour and mix. Add vegetable broth, tomato paste, and soy sauce then stir well.

Cook until the mixture starts to bubble and thicken, then pour it into a large casserole dish.

Cover with fluffy mashed potatoes and drizzle melted vegan butter over the top.

Bake at 350° F for 30 minutes until bubbly and golden brown.

This vegan shepherd's pie is a true crowd pleaser! You can even prepare it ahead of time for a comforting meal ready in a flash!
