Sausage Rolls Made Vegan

Saute onion and garlic, then add herbs and spices, soy sauce, and water.

Add TVP (textured vegetable protein.)  This is a dehydrated soy product that will soak up the flavor of the broth and has a meaty texture.

Add a flax egg to bind the soy sausage together.

Add parsley and mix well.

Slice pastry puff into 3 pieces.  Cut down the fold lines that are already there.

Place a line of the vegan sausage filling down the center of each puff pastry strip.  Brush one side with aquafaba.

Fold the pastry puff over and seal up the long edges by pressing with your fingers.

Cut the sausage rolls into small pieces, cut a slit in the top of each one, and brush with more aquafaba.

Bake at 375° F for 25 minutes until they puff up and are golden brown.
