Sweet & Sour Tofu

This sweet & sour tofu tastes like it came from your favorite Chinese restaurant, yet it's quick & easy to make. Made with crispy fried tofu, colorful stir-fried veggies, pineapple & a sweet &  tangy sauce.

Make the sweet and sour sauce: Add apple cider vinegar, brown sugar, ketchup, soy sauce, pineapple juice & corn starch to a small saucepan. 

Heat until the sauce thickens & comes to a boil.  Turn off the sauce & set it aside.

Wash & chop the veggies into bite-size pieces. Sauté until they start to get bright in color.

Toss in the cubed pineapple & sprinkle with salt, then sauté until the veggies are tender, but not too soft, & turn off the heat.

Pour the sweet and sour sauce over the stir-fry.

Press tofu & cut into small cubes. Toss in cornstarch until coated.

Fry until crispy.

Add fried tofu to the stir-fried veggies & serve over rice.
