Add frozen veggies, full-fat coconut milk & water to a pot.
Add salt & curry paste & cook over medium heat until it begins to boil. Then add the washed rice.
Cook until the liquid is just below the rice line, then cover & turn the heat to low for 5 more minutes.
Turn off the heat & let it sit covered for about 10 minutes. Take off the lid & fluff with a fork.
Serve this 1 pot meal with a squeeze of lime and enjoy!
