Vegan Stuffed Shells

These are the best vegan stuffed shells you will ever eat! Filled with healthy tofu ricotta & spinach & topped with tomato sauce & melty vegan mozzarella cheese. Perfect for a holiday meal.

Blend tofu, spinach,  nutritional yeast, garlic, basil, olive oil, salt & pepper in a food processor. 

Fill cooked jumbo shells with the tofu ricotta mixture.

Place shells into large baking dish.

Pour a jar of marinara sauce over the shells.

Cover & bake.

Top with vegan mozzarella cheese, cover again & bake. Uncover & bake until bubbly.

Garnish with fresh chopped basil or parsley.

Serve hot.
