Vegan Macaroni Salad
A fun vegan twist on a classic macaroni salad. Make with gluten free pasta for a gluten free meal.

Ingredients

16 oz. package
macaroni of choice
¾
cup
vegan mayo
2
TBS
yellow mustard
½
tsp
garlic powder
1
package
Smart Dogs
or other veggie dogs cut into small pieces
1
stalk
celery chopped small
optional
Salt to taste
Instructions
Cook the macaroni according to package directions.
While the pasta is cooking, mix mayo, mustard, and garlic powder together in a large bowl.
Cut the cold Smart Dogs (and celery if desired) into bite-sized pieces and mix in with the sauce.
Drain and rinse pasta well with cold water.
Toss pasta and mix all ingredients well.
Keep in the fridge until ready to serve.
Notes
Leave out the veggie dogs for a more traditional pasta salad.
