Vegan Feta Cheese - Tofu Feta

A recipe for homemade vegan feta cheese made from tofu.

Ingredients

  • 2 tbsp warm water
  • 1 tsp white miso
  • 2 tbsp light olive oil or other neutral flavored oil
  • 1 tbsp nutritional yeast
  • 1 tbsp apple cider vinegar
  • 1 tsp lemon juice
  • 1 1/4 tsp salt
  • 1/2 tsp garlic powder
  • 1 tsp oregano (optional)
  • 1 lb firm tofu

Instructions

  1. Press a block of firm tofu to extract as much water as possible.

  2. Combine all the ingredients except for the tofu in a shallow dish and stir until well mixed.

  3. Crumble the tofu with your hands into small bite-sized pieces and add to the marinade.  

  4. Stir well to coat the tofu in the marinade and place in the fridge for at least 1 hour.

  5. Use as you would feta cheese.
