Line a cookie sheet with parchment paper and have your chosen add-ins chopped and ready to sprinkle on top.
Pour a full bag of vegan white chocolate chips into a microwave-safe glass bowl.
Microwave in 20-second intervals, stirring between each one until the chocolate chips are melted. (This usually takes 4 intervals of 20 seconds or about a minute and 20 seconds total.)
Pour the melted chocolate onto the parchment paper and smooth it out with a spatula until it's about 1 cm thick.
Sprinkle the melted white chocolate with dried fruit, chopped nuts, candy, and or sprinkles.
Allow to cool completely until the bark hardens, then break it into smaller pieces.
Notes
For extra vanilla flavor, add 1 teaspoon of vanilla extract after melting the chocolate chips.
If you don't have a microwave, you can also melt the white chocolate chips in a double boiler. Do not melt them directly in a pan on the stovetop.
You can also mix half dark chocolate and half white chocolate, either by layering them or by swirling them together. (Melt the dark chocolate chips the same way as the white chocolate chips.)
