Make the Just Egg custard. In a large shallow dish mix 3/4 cup Just Egg, 1/2 cup plant milk, 1 tsp vanilla, 3/4 tsp cinnamon, and 1/4 tsp nutmeg. Stir well with a fork or whisk until well combined.
Place the slices of bread into the faux egg mixture for 1-2 minutes on each side allowing the bread to soak up the batter.
While the bread is soaking, heat a skillet to medium and add 1/2 tablespoon of vegan butter to the bottom. When the pan is hot and the butter is melted, take the bread out of the batter and scrape off any drips and add it to the prepared hot pan.
Cook the French toast on each side for about 3 - 5 minutes until the batter is firm and golden brown. (Repeat the process and butter the pan between cooking the additional slices of bread.)
Serve your plant-based French toast hot with some plant-based butter, maple syrup, sprinkles of powdered sugar, and/or fresh berries.
Notes
Be sure to use a nonstick skillet or a well-seasoned and well-oiled iron skillet, Just Egg tends to stick during cooking.
Remember that the custard mixture has soaked into the center of the bread so you have to cook it thoroughly on each side to be sure the center is cooked. (If you cook it over high heat the outside will cook faster than the inside.)
You can cut the sliced bread into slices and serve it as French toast sticks with maple syrup on the side for dipping.
