These easy roasted frozen green beans may be the most delicious veggie you can make with very little effort. This is the perfect side dish for busy weeknights, but yummy enough to serve with a holiday meal. Use my trick of sprinkling them with garlic breadcrumbs and watch them disappear!

These garlic roasted green beans go well with cheesy pasta dishes like vegan mac and cheese, cacio e pepe, vegan alfredo, or tofu pasta sauce.

Ingredients and substitutions

  • Frozen Green Beans – I prefer frozen green beans because they are easier to store and retain the flavor of fresh green beans without needing to be used up as quickly. You can use fresh whole green beans, though, if you have them. They will need about 5 more minutes in the oven.
  • Olive Oil – I use extra-virgin olive oil, but you can also use light olive oil or any other oil you choose.
  • Salt – for flavor.
  • Garlic Breadcrumbs – These are optional, but they add a lot of flavor and texture to the beans. For this, you will need Panko bread crumbs, vegan butter, garlic powder, onion powder, salt, and herbs such as Italian seasoning, parsley, or oregano. You can also add some vegan Parmesan cheese or nutritional yeast for extra flavor.

Helpful tools

  • A Baking Sheet – any metal sheet pan with edges will work. You can line it with parchment paper for easier cleanup if you would like, but I think they get crispier and taste better without the lining.

How to make roasted green beans

Step 1 – Preheat the oven to 400°F.

Step 2 – Place the frozen beans on a baking sheet and drizzle with 2 tablespoons of olive oil. Mix well, then sprinkle with some salt.

Step 3Make the seasoned breadcrumbs. While the green beans are baking, melt 1 tablespoon of vegan butter, then add 1/4 teaspoon garlic powder, 1/8 teaspoon onion powder, 1/8 teaspoon salt, 1/2 teaspoon Italian seasoning, 1/2 tablespoon nutritional yeast, 1/4 teaspoon dried parsley, and 1/4 cup of panko bread crumbs. Mix well.

Step 4 – After baking for 20 minutes, take them out of the oven, stir the beans around, and sprinkle with the garlic-herb breadcrumb mixture.

Step 5 – Bake the green beans for an additional 5-7 minutes, until the breadcrumbs are golden brown and the beans are slightly crispy on the edges.

Note – I like to use French green beans, which are a little thinner. If you use larger, fatter green beans, they will need a few extra minutes in the oven!

Pro Tips

  • To make these green beans gluten-free, simply use gluten-free breadcrumbs, omit the breadcrumbs, or drizzle with a squeeze of lemon juice.
  • You can add other vegetables to the sheetpan too, like cauliflower, broccoli, or Brussels sprouts.
  • Sliced almonds are also delcious with green beans and can be added along with the breadcrumbs or in their place for a gluten free opiton.

Storage and reheating

Refrigerate: Leftover roasted green beans will keep well in the fridge for 3 – 5 days in an airtight container.

Reheating: Reheat the green beans in the microwave for 1-2 minutes, or place on a baking sheet in a 350°F oven for 5-7 minutes, until warm.

Roasted Green Beans from Frozen

Easy roasted frozen green beans with garlic herb breadcrumbs.

Ingredients

  • 4 cups frozen green beans
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Garlic herbed breadcrumbs (optional)

  • 1 tablespoon butter
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1 teaspoon Italian herbs, or dried parsley or oregano
  • 1 teaspoon nutritional yeast, (optional)
  • 1/4 cup panko bread crumbs

Instructions
