What vegetables are affected?

Currently, we don’t know which vegetables are safe to eat raw, so for the next few weeks, it is recommended that you cook all vegetables to at least 158°F to kill the parasite. (This includes fresh herbs like basil, cilantro, and parsley, so I don’t recommend adding a garnish at the end of cooking.)

These are some of my family’s favorite recipes. They are quick, easy summer meals made on the stovetop in about 20 minutes or less. No oven to heat up the house, and no raw veggies that could get you sick.

Be sure to cook the veggies and herbs in these recipes to an internal temperature of at least 158° F to kill the Cyclospora parasite.

PS – Slow cooker recipes, like slow cooker red lentil dahl, creamy vegetable soup, or vegan pot pie in a slow cooker, are also a great way to cook your veggies without heating up the kitchen in the summer.
