Why make this recipe
While traveling across the country, my family and I stopped at Sweet Art in St. Louis, MO. After a day of car food, we were in the mood for something healthy, so we ordered the kale salad. One bite and we were all freaking out. Kale never tasted so good!
It has taken me 2 years of trying to recreate it, but I finally did it with this nutritional yeast dressing. I use it to make a crispy kale salad, but I’ve discovered it’s also great on nearly any salad and delicious as a dipping sauce for vegan chicken nuggets, tofu nuggets, fried broccoli, and fried cauliflower.
Ingredients and substitutions
- Nutritional Yeast: You need to use nutritional yeast in this recipe; nothing else has the same flavor, and it can not be substituted.
- Oil: You can use any neutral-flavored oil you like. Canola oil, light olive oil, or avocado oil all work well.
- Bragg’s Liquid Aminos: You can swap this for soy sauce or Tamari if you don’t have Bragg’s, but I prefer the flavor of Bragg’s in this dressing. I don’t recommend coconut aminos since they have a different flavor.
- Apple Cider Vinegar: I think that this gives the best flavor, but you can swap it out for red wine vinegar or white vinegar if you don’t have apple cider vinegar.
- Garlic: Use fresh garlic in this dressing because it acts as an emulsifier, making the dressing thick and creamy. Don’t swap it out for garlic powder, because the dressing will not thicken.
- Lemon Juice: Fresh-squeezed lemon juice tastes best, but jarred juice works too.
- Agave Nectar: To sweeten the dressing a little. You can also swap this out for maple syrup.
Helpful tools
- A blender or an immersion blender.
How to make nutritional yeast dressing
A full printable version of this recipe with ingredient measurements is available at the bottom of this post.
Step 1 – Add all of the ingredients to a blender or immersion blender. (Nutritional yeast, peeled whole garlic cloves, oil, apple cider vinegar, Bragg’s Liquid Aminos, lemon juice, and agave nectar)

Step 2 – Blend for about 30 seconds until creamy.
Step 3 – Use the dressing on my crunchy kale salad, over green salads, on grain bowls, or as a dipping sauce for French fries, tofu, or chicken nuggets.

Pro Tips
- Use at least 3 cloves of fresh garlic. The garlic helps emulsify the dressing so it stays creamy and doesn’t separate after blending.
- You can adjust the amount of sweetener in the dressing to your taste. I like 2-3 tablespoons of agave nectar in it, but you can omit it or add more for a sweeter dressing.
Storage
Refrigerate: Nutritional yeast dressing will keep well in the fridge for about 1 week in an airtight container.
