Why make this recipe

If you like the authentic eggy taste of traditional French toast, but don’t want to use real eggs, this recipe is for you! I usually make vegan French toast from chickpea flour to replace the eggs, but when I want to make it super easy, I use Just Eggs for the batter.

Just Eggs is egg-free, dairy-free, and gluten-free too, so as long as you use gluten-free bread, your French toast will also be gluten-free.

Ingredients and substitutions

  • Just Eggs – this is a brand of vegan egg substitute that comes in a small yellow bottle in the refrigerated sections of most major grocery stores. If you don’t have Just Egg, use my chickpea French toast recipe instead.
  • Plant-Based Milk – I usually use soy milk or oat milk, but almond milk, cashew milk, or coconut milk will also work well.
  • Maple Syrup – to give a hint of sweetness, you can swap this out for any vegan sweetener that you want or you can leave it out completely.
  • Vanilla Extract – for flavor. You can also use almond extract or half vanilla and half almond.
  • Cinnamon – for flavor.
  • Nutmeg – for flavor. You can also swap out the cinnamon and nutmeg for some pumpkin pie seasoning.
  • Vegan Butter – to fry the French toast in. You can also use any neutral-flavored oil instead.
  • Bread – you can use any type of vegan bread that you wish. French bread or sourdough bread works well. You can use presliced bread or cut your own slices from a whole loaf if you want thicker-style French toast.

Helpful tools

  • Non-Stick Frying Pan – the Just Egg is very sticky when cooked so you will want to use a non-stick pan or a well-seasoned iron skillet.
  • Shallow Dish – to mix the egg-like custard and soak the sliced bread.

How to make French toast with Just Egg

Step 1 – Make the Just Egg custard. In a large shallow dish mix the Just Egg, plant milk, vanilla, cinnamon, and nutmeg. Stir well with a fork until well combined.

Step 2 -Place the slices of bread into the faux egg mixture for 1-2 minutes on each side allowing the bread to soak up the batter.

Step 3 -While the bread is soaking, heat a skillet to medium and add 1/2 tablespoon of vegan butter to the bottom. When the pan is hot and the butter is melted, take the bread out of the batter and scrape off any drips and add it to the prepared hot pan.

Step 4 -Cook the French toast on each side for about 3 – 5 minutes until the batter is firm and golden brown.

Step 5 -Serve your plant-based French toast hot with some plant-based butter, maple syrup, sprinkles of powdered sugar, and/or fresh berries.

Pro Tips

  • Be sure to use a nonstick skillet or a well-seasoned and well-oiled iron skillet, Just Egg tends to stick during cooking.
  • Remember that the custard mixture has soaked into the center of the bread so you have to cook it thoroughly on each side to be sure the center is cooked. (If you cook it over high heat the outside will cook faster than the inside.)
  • You can cut the sliced bread into slices and serve it as French toast sticks with maple syrup on the side for dipping.

Storage and reheating

Refrigerate: Leftover just egg French Toast will keep well in the fridge for 3 – 5 days in an airtight container.

Freeze: This vegan French toast freezes well and can be stored in an airtight container in the freezer for up to 3 months.

Reheating: Reheat the French toast on a hot lightly buttered skillet for 1-2 minutes on each side until warmed through.

Just Egg French Toast

A vegan French toast recipe made from Just Egg.

Ingredients

  • 3/4 cup Just Egg, (this is 1/2 of the bottle)
  • 1/2 cup plant-based milk
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 slices bread
  • 2 tablespoons vegan butter, for frying

  • Cook the French toast on each side for about 3 – 5 minutes until the batter is firm and golden brown. (Repeat the process and butter the pan between cooking the additional slices of bread.)
  • Serve your plant-based French toast hot with some plant-based butter, maple syrup, sprinkles of powdered sugar, and/or fresh berries.
