Pour this savory plant-based gravy over mashed potatoes, lentil loaf, vegan wellington, vegan chicken, or any hearty vegan meal. Perfect for Thanksgiving or any holiday, yet easy enough to make any time you’re craving some classic vegan comfort food.
It’s simple to make and easily adapted to make vegan brown gravy, white gravy, turkey style gravy, golden gravy, or mushroom gravy too!

🧾 Ingredients and substitutions
- Broth – this can be vegetable broth or bullion cubes to make a flavored broth. I personally like Not Chick’n broth or other chicken-style vegan broth. If you want a brown “beef” style gravy, you can use Not Beef broth cubes.
- Flour or starch – to thicken the gravy. I prefer potato starch, but you can also use arrowroot or corn starch, or just plain white all-purpose flour if you don’t need it to be gluten-free.
- Nutritional Yeast – to give it a rich umami flavor and golden color.
- Poultry Seasoning – for flavor. You can also use fresh herbs like sage, oregano, and thyme, or make your own with this homemade poultry seasoning.
- Garlic Powder – for flavor. You can also use onion powder.
- Vegan Butter – (optional) for a richer gravy. You can also use coconut oil or any other neutral-flavored oil or simply omit it for oil-free gravy.
- Salt and Black Pepper – to taste.
- Put all of the ingredients except for the vegan butter into a saucepan. (The broth should be cold or add cold water and a bouillon cube).
- Whisk until the starch dissolves.
- Turn on the stove to medium heat and stir frequently until it starts to boil.
- Simmer for 30 seconds while stirring constantly then turn off the heat.
- Add the vegan butter or oil if you choose and stir until it’s incorporated. You can also add some fresh rosemary or sage to flavor the gravy.
📖 Vegan gravy variations
- Brown Gravy – use vegetable or “beef” flavored broth, add 1 tablespoon of soy sauce, (or Bragg’s Liquid Aminos) and omit the poultry seasoning.
- Turkey Gravy – follow the basic gravy recipe using chicken-style vegan broth, and add 1 tsp of Liquid Aminos, tamari, or soy sauce.
- White Gravy – use 1 cup vegetable broth and 1 cup vegan milk and omit the poultry seasoning. White gravy is best if thickened with a roux so check out my recipe for vegan white gravy for full details!
- Golden Gravy – follow the basic gravy recipe adding 1 extra tbsp of nutritional yeast and 1/4 tsp of turmeric. Add fresh ground pepper to enhance the nutritional benefits of turmeric.
- Mushroom Gravy – finely dice 8 oz. of mushrooms and saute them in 1 tbsp of vegan butter, margarine, or oil for about 5-8 minutes over medium-low. Once they are cooked and begin to release their juices, add the ingredients for the basic vegan gravy recipe.

- Be sure to add the starch while the ingredients are still cold. It will be lumpy and not dissolve all the way in hot liquid.
- Serve the gravy warm, it will start to thicken when it cools.
🌟 How to thicken vegan gravy
You can use many things to thicken your gravy. Flour, corn starch, potato starch, and arrowroot all work well. White flour is easy if you don’t need it to be gluten-free.
Personally, I prefer to use potato starch. I feel that it gives it the best flavor and texture and it doesn’t get gloppy and thick when it begins to cool as other methods do. I even prefer it over wheat flour for its great consistency and flavor!
🥡 Storage and reheating
Refrigerator: Store your gravy in the fridge for up to 5 days in a sealed container.
Freezing: Freeze the gravy in a freezer bag squeezing out as much air as possible and sealing well. It will keep in the freezer for up to 3 months.
Reheating: Put the gravy in a saucepan and reheat it on the stovetop until warm. If it’s too thick, you can add a tablespoon of water to thin it out.

You can serve your gravy over anything that you would like. I love to serve it over seitan roast like my vegan turkey, vegan ham, seitan roast beef, or even vegan chicken.

I have been looking for a great vegan gravy for a long time, and I was suspicious that this looked too easy to be great. It is both easy and great and I made up a jar of chicken seasoning to use again. If I could give six stars I would.

I used this recipe as part of a pot pie. It tasted wonderful, but it wasn’t the pretty golden like the picture, as the sage in the poultry seasoning turned it green. Oh well, it helped make a nice pot pie. Thank you.
