These easy vegan summer meals with get you in and out of the kitchen fast, don’t require an oven, and are filled with fresh summer produce. Many can be made ahead of time and stored in the fridge for meal prep.
After being vegan for nearly 27 years now, I’m well-versed in the quick and easy summer meal. I want to be outside with my kids or hiking with my dogs on summer evenings. I don’t want to be stuck in the kitchen, and I definitely don’t want to turn on the oven and make the house any hotter.
These are go-to, quick, and easy meals that I love to make during the warm weather months. They are full of summer veggies, yet are satisfying enough to fill up my hungry teenage boys.
