These vegan seitan gyros are a plant-based rendition of the beloved Greek classic. Tender strips of seitan, flavored with classic gyro spices, nestled in warm pita bread, and topped with healthy veggies and a tangy tzatziki sauce.

This is my family’s go-to quick and easy recipe lately when I need to get a healthy filling lunch or dinner on the table in minutes. When using premade seitan, you can whip up this plant-based wrap in about 10 minutes.

🧾 Ingredients and substitutions

  • Seitan – you can use store-bought seitan like the Gardein brand “Be’f Tips” or Trader Joe’s Brand Korean Beef Strips. You can also easily make your own homemade beef seitan or use my quick and easy seitan chunks recipe.
  • Gyro Spices – to make it taste more like an authentic gyro, spice it up with traditional spices.
  • Tzatziki Sauce – I like to use the premade vegan tzatziki sauce from Trader Joe’s or make my own homemade vegan tzatziki. You can also swap this out for some sour creamyogurttahini sauce, or hummus, however, the tzatziki sauce gives it the authentic flavor of a gyro.
  • Pita Bread – to wrap the sandwich. You can also use tortillas or any other wrap instead.
  • Cucumber – to add crunch and texture to the wrap.
  • Red Onion – optional for flavor.
  • Tomatoes – you can use halved cherry tomatoes or diced tomatoes.
  • Fresh Herbs – fresh parsley and/or fresh dill add a lot of flavor to these vegan gyros.
  • Vegan Feta Cheese – (optional) You can also add some feta to the wrap. I like to use my vegan tofu feta.

🥄 How to make seitan gyros

Step 1 – Heat a tablespoon of oil in the bottom of a heavy-bottomed frying pan or iron skillet. Add a package of vegan beef-style seitan strips (about 3 cups).

Step 2 – Stir well to coat with the oil, then sprinkle with 2 tablespoons of gyro seasoning and cook over medium-low heat for about 5 minutes until warm and slightly browned. Turn off the heat.

Step 3 – Wash and slice tomatoes, cucumbers, and red onions, then prepare the vegan tzatziki sauce if you are making it homemade.

Step 4 – Warm 4 pieces of pita bread in the microwave for 30 seconds or warm them on a dry skillet on the stovetop.

Step 5 – Place the warm pita on a plate and lay a large handful of the seitan strips in the center of the pita with some diced tomatoes and cucumbers, then top with a few tablespoons of vegan tzatziki sauce.

Step 6 – Fold up the bottom and then roll it into a wrap. Serve the vegan gyros warm.

👩🏻‍🍳 Pro Tips

  • Cook the faux meat over medium heat to allow the spices to warm up and infuse into the seitan.
  • Don’t overcook the seitan or you may burn the gyro spices.

🥡 Storage and reheating

Refrigerate: The gyro-seasoned seitan will keep well in the fridge for 3 – 5 days in an airtight container. Keep the rest of the ingredients in separate containers in the fridge and assemble them before eating.

Reheating: Reheat a serving of seitan in the microwave for about 1 minute or reheat with a little oil in a skillet.

Seitan Gyros

A vegan gyro made with seitan instead of meat.

Ingredients

  • 3 cups beef seitan
  • 2 tablespoons Gyro Spices
  • 1/2 cup vegan Tzatziki sauce, or plain vegan yogurt

  • 1 cup cucumber, sliced
  • 1/4 cup red onion, sliced
  • 1 cup tomatoes, diced
  • 1/2 cup parsley, optional
  • 1/2 cup Vegan Feta Cheese, optional
